Homemade Rice Krispy Treats

It’s back to school, and although we homeschool, all the extra curricular activities have officially begun. Pick up, drop off, snacks, on the go meals, and more.  

One treat my boys absolutely love is Rice Krispy Treats. Game day team treats or a great play date treat that’s nut and gluten free as well. One of my go to’s to take to a party that both young and old enjoy.  


6 tbsp Butter

1.5 (10oz) pks Marshmallows 

1 tsp Vanilla 

6 cups Rice Krispy Cereal 


  • Grease and line a 13.5 x 9.5 inch baking dish with parchment, and set aside. 

  • Melt butter then add marshmallows and melt low and slow. 

  • Cooking it low and slow ensures even melting and doesn’t over cook the marshmallows. 

  • Once melted, spray a wooden spoon with oil, remove from heat and stir in vanilla. 

  • Spraying the wooden spoon with oil helps the marshmallow mixture not to stick to the spoon. 

  • Now quickly once the vanilla is mixed in, stir in the cereal. 

  • Pour into your greased and lined baking tray. 

  • Spray some more oil onto your wooden spoon and gently press the mixture into the rectangle form. 

  • Now take another parchment sheet and press firmly to pack the treats into an even layer.  

  • Let cool for about an hour then cut into squares and enjoy right away or wrap individual for on the go or party treats! 

Want to kick these up a notch if you don’t have nut allergies?! Add equal parts of any nut butter as the butter in the recipe (so 6tbsp) when the marshmallows melt. Give it a stir to melt through then add the rice cereal and mix. Add a handful of chocolate chips and pour into your tray! Top with some sprinkles because why not?! And enjoy!

*Marshmallow fluff may be used if desired, I just prefer the hold and texture of real marshmallows.
