Roti/Chappati Flatbread

Roti (Row-T) in Urdu, also known as Chappati (Chup-a-T) in Hindi is essentially flatbread. It's just a water and wheat flour based dough cooked on a high heat cast iron similar to tortilla.

The recipe is pretty easy but minor details will ensure a tasty and soft flatbread.

Ingredients:

1 cup Whole Wheat Flour

1/4 cup All Purpose Flour

1/2 Cup Warm Water

1/8 tsp Salt

In a bowl mix together your flours and salt. The reason you add a little bit of the all purpose flour is to ensure softness. Whole wheat when cooked can stiffen up, so this will help keep a soft dough.

Now slowly pour in half the warm water, so 1/4 cup. Knead by hand or your electric mixer using the dough paddle. Slowly add more water, a tbsp at a time until you see a firm dough combine. If it's sticky, knead in a little more flour. If it's too dry add a little more water.

Your dough should look something like this:

Cover with a damp cloth and let your dough rest in the fridge for 20 minutes to allow the gluten to form.

Now knead one last time and divide the dough equally into 6 balls. Roll out each ball using extra flour to avoid sticking in to circle rounds.

Heat your cast iron or fry pan. Brush with ghee or butter and lay your rolled out flatbread onto your pan. Let it cook halfway (30 seconds to a minute) then flip over and cook the other side halfway. Then flip 2 more times to fully cook.
