Spiced Potato & Fenugreek French Beans

Spiced veggies are one of my all time favs. It's something that reminds me of my childhood and my beautiful mother. Granted growing up I always gave my mom a fuss about veggies, but moving away from home only made me miss the aromatic smells of delicious spiced veggies and my moms "home food" immensely.

Here's my take on my moms classic potato and french beans desi style. It's quite easy and a definite favorite amongst us siblings.

S/O to my sisters for perfecting the measuring increments to make it easy for you all.

Ingredients:

  • 2 sm Potatoes (cubes)

  • 1 pkg French Beans (chopped)

  • 1/2 tsp Fenugreek Seeds

  • 1/2 Garlic Paste

  • 1/2 Ginger Paste

  • 1 tbsp Dry Fenugreek Leaves

  • 1 tsp Salt (or to taste)

  • 1 tsp Red Chili Powder

  • 1/4 tsp Turmeric

  • 1/4 cup Oil

Method:

  • Heat oil, and fry fenugreek seeds, garlic, ginger, salt, red chili powder and turmeric.

  • Add potatoes and french beans and fry well.

  • Add 1 cup water, cover and cook until tender.

  • Put heat to low and add dry fenugreek leaves and cover and steam on low for 10 mins.

  • Serve garnishing with a squeeze of lemon and cilantro. Enjoy!

I love eating these French beans with a side of yogurt and chapati (flatbread). Hope you try it out and enjoy it as much as we do!
