Maple Glazed Chicken Rolls
Filets of chicken breast stuffed with julienne veggies, rolled and pan grilled in a maple glazed, sticky, sweet sauce.
This was a recipe I made up when I had a lot of vegetables I needed to use up and had to find a way to sneak some veggies into my picky eater. And what better way to hide it then in one of his favorite foods...CHICKEN!
I start by marinating thinly sliced chicken filets.
I use salt, pepper, Worcestershire sauce, hot sauce and my favorite local steak sauce. You want to mix it all and let it marinate for ATLEAST 30 mins.
While the chicken is marinating let’s move onto our glaze. In a large sauté pan you want to add 2 tablespoons of butter and 1 shallot, finely chopped. Once it becomes translucent add maple syrup, sparkling or regular red grape juice, and chicken stock. Whisk it all then add a pinch of red pepper flakes and more of your favorite steak sauce. Continue to whisk and let it reduce until it forms into a thick glaze.
Once a nice, thick, glossy glaze is formed, pour it into a bowl and set aside.
Let’s move onto our veggies. I finely julienned green onions, carrots, bell peppers, and zucchini. I also finely minced 2 cloves of garlic. Then in the same sauté pan add your chopped garlic with some olive oil. Sauté until fragrant then add your veggies, a teaspoon of Italian seasoning and 1/2 tsp of red chili flakes. Sauté on high stirring constantly for 5 minute just to mix everything through. Then pull out and set aside in a bowl.
Now it’s time to assemble. Lay a chicken filet on a cutting board and add a small amount of the sautéed veggies to one end. Roll up the chicken to make a bundle. Continue assembling all the filets then place the chicken rolls FLAP SIDE DOWN in the pan with the glaze you set aside. Brown the chicken, flipping to each side to cook it through...about 10 to 15 minutes.
Place the cooked chicken on a platter garnishing with the extra glaze left in the pan and chopped green onions.
Serve these savory maple glazed chicken rolls with a side of roasted potatoes and dinner rolls to have a complete satisfying meal.
