Samosa Pot Pie (Vegan)


Samosas are a South Asian mini stuffed pastry appetizer. Traditionally stuffed with meat (get the recipe here) or potato. Usually fried to golden perfection.


My kids love samosas but I thought...if these are essentially mini pastry pies, why not turn them into an actual pie? What kid doesn't love pie? Forget that, what grown up doesn't love pie? And that's when the light bulb went off and I got to work in the test kitchen! Here's my take on this deliciously flaky Samosa Pot Pie.

Filling Ingredients: 2 tbsp Oil 12 sm Potatoes (steamed/boiled & chopped)

1/2 lg Onion (chopped)

1 tbsp Ginger (grated) 1 Garlic Clove (grated) 1/4 tsp Cumin Seeds

1/2 tsp Ground Cumin 1/2 tsp Ground Coriander 1 tsp Chili Powder 1/2 tsp Turmeric 1 tsp Salt (or to taste) 1/4 tsp Chaat Masala (optional) 1 can Coconut Milk 2 tbsp Gram Flour  1/2 cup Frozen Peas

1 tsp Garam Masala

Handful of Cilantro

1/4 Lemon (juiced)

In a pan, saute the onion in oil until translucent. Now you want to add in all your spices EXCEPT garam masala, and mix while letting the spices bloom for 1 minute. Next add in your gram flour and mix until it has coated and made a thick paste with the onions. Carefully whisk in your can of coconut milk. 

Stir it as it thickens, then add in your chopped steamed potatoes. Along with your frozen peas. Take it off the heat and add in your freshly chopped cilantro, garam masala, and lemon juice. Taste to adjust the seasonings and make sure you have enough salt.

Now it's time to assemble! You can use any pastry recipe of choice or use store bought pie dough or puff pastry dough. Just be sure to pre-bake your pie dough for the bottom layer of your pie.  I poked holes with a fork into my pie shell and prebaked it for 10 minutes. Then just pull out and pour in your samosa filling. Now cover the top with another layer of pie dough.  Traditionally, Samosas have cumin seeds in their outer crust, so you can knead in 1/4 tsp of cumin seeds if desired. I like them to be on the outside so I brushed my pie with egg white (use coconut oil if vegan) and then sprinkled the cumin over top. 


Bake it in a 400 degree Fahrenheit oven for 30 to 40 minutes until its golden brown and flaky. 

And now the hardest part...waiting! Once it's cooked and out of the oven, let it cool for at least 10 minutes before digging in. During that wait time you can get a yogurt dip waiting to serve along side the delicious pie.


Ingredients:

2 to 3 tbsp Yogurt or Sour Cream

1 tbsp each of Cilantro and Mint

Salt/Pepper to taste

1/4 tsp Cumin Seeds

1 Serrano Pepper (optional for heat)

1 Garlic Clove


Give it a good blend in a blender, add a squirt of lemon if needed and you have yourself a delicious herb yogurt...also known as Raita for South Asians.
