Sheer Khurma Favors (Vermicelli Pudding)

Sheer meaning "Milk" and Khurma meaning "Dates or Sweet" is a popular South Asian dessert made during the holidays. It is exactly what it means, a sweet milk. Its thin vermicelli noodles in a rich cream and milk mixture with sugar and dates, cooked to make a nice silky dessert milk or pudding, with a garnish of nuts. If you were in any Pakistani, Indian, or Bangladeshi home and woke up to the aroma of Sheer Khurma you knew it was Eid. I remember my mom would make a huge pot of it and we would stand with our bowls ready to gulp it down as fast as we could and rush out the door to make it to Eid prayers.

It's a staple and what better way to share the spirit of Eid than by gifting sheer khurma to family and friends or co-workers. It's as authentic as you can get! Below I have posted the recipe and then if you scroll further I share how to assemble the favors.

Sheer Khurma Recipe:

Serves 6-8

Ingredients:

  • 1⁄2 c. ( 1⁄2 pk.) Vermicelli Noodles

  • 1 Tbsp Butter

  • 4 c. Milk

  • 2c. (pint) Half n Half

  • 1⁄4 c. Sugar

  • 2 Cardamom Pods

  • 2 Tbsp Slivered Almonds

  • 2 Tbsp Chopped Pistachios

  • 2 Tbsp Chopped Dates (optional)

Method to making the dessert:

-Cook vermicelli noodles and butter in a sauce pan until noodles are slightly browned. -Now add the rest of the ingredients EXCEPT the dry fruits and nuts. -Bring it to a boil and let simmer for 15 mins, then add your dry fruit and nuts, reserving some for garnish. -Let it cook for another 10 to 15 mins until the noodles cook through and the milk slightly thickens. -Pour into serving dish and garnish with reserved dry fruit and nuts. -Serve warm or chilled.

Favor Ingredients and Items:

Makes 4 (8oz.) Jelly Jars

  • 4 Jelly Jars (8 oz. each)

  • 1 pk Vermicelli Noodles

  • 1/2 cup. Sugar

  • 8 Cardamom Pods

  • 2 Tbsp Slivered Almonds

  • 2 Tbsp Chopped Pistachios

  • 2 tbsp Chopped Dates (optional)

Method of making favors:

  1. Crush the vermicelli noodles into small pieces then split the pack up between 4 jelly jars.

  2. Now add an 1/8 cup of sugar to each jar, on top of the noodles.

  3. Now top with the cardamom pods.

  4. In a small resealable bag add all your dry nuts.

  5. This ensures keeping the nuts seperate for later but also in case anyone has nut allergies they can omit them.

  6. Print the label using the template below or using your own and seal the lids of the jars.

  7. Just fit everything in and place the lid and that’s it! Decorate it with a bow, some cute labels and, a recipe card and you have the cutest authentic Eid dessert package to share with family and friends.

  8. All your friends and family have to do is add the milks and butter! For this amount they would add 1/2 tbsp butter, 2 cups of milk and 1/2 cup of half n half or they can just add 2.5 cups of whole milk.

Notes:

  • Vermicelli can be found at your local Indian/Pakistani store. For a Gluten Free alternative you can get rice vermicelli instead of using wheat vermicelli.

  • The jelly jars come in individual but also in a box of a dozen in the canning section of your local grocery store or craft store. It's cheaper to buy the dozen pack then singles.
