When my husband and I first got married, one of our favorite places to hangout was Baker Square. I was still a college student and he was a consultant always traveling. We'd take our laptops late night and study/work while enjoying the ultimate Baker Square pie. Wednesday's were definitely a perk...it was Free Pie Wednesday! We always shared the Chocolate Pie and it was divine! The silky smooth chocolate center with a delicious, flaky crust just brings back so many memories.
We grew up, moved out of Chicago, and Baker Square closed. :( And that's when I had to figure out how to make their delicious Chocolate pies. Here's my take on the Baker Square classic that brings back great memories!
Ingredients:
1/2 cup Sugar
1/8 cup Corn Starch
Pinch of Salt
1.5 cups Milk
2 Egg Yolks
4 oz German Chocolate (chopped)
1 tbsp Butter
1 tsp Vanilla
6 Mini (4oz) Pie Crust (store bought)
Method:
-In a saucepan stir together the sugar, corn starch and salt.
-Now add the milk and egg yolks.
-Whisk together until smooth then continue to stir until a thick custard is formed.
-Once thickened, remove from heat and add the chopped chocolate, butter and vanilla.
-Whisk well until all the ingredients are combined and you're left with a silky custard.
-Pour into pie crusts and chill for atleast 4 hours before serving.
Indulge in a deliciously, silky, smooth, chocolate pie topped with fresh cream, berries, and chocolate curls!
